牛奶面包


记忆中的牛奶面包很香,很好吃。
是妈妈特地去学做的。

记得他每次都做好多个,一些给我们一家人吃,和一些是请同事们吃的。
当初她学会后就经常给我们做。
但后来因为工作太忙,常常要加班,很久都没在做给我们吃了。
一直到她将要里快我们的一次,她突然跟我说她找了很久终于找回了那牛奶面包的食谱。
可惜是我再也没机会吃到了。


其实自己很久以前曾经做过,但已经忘了怎样做。
而网上也找了很久才找到相似的食谱。

两个星期前做了一次不是很成功,还能吃啦。

那天星期四晚上,我再次向难度挑战。
终于比上次好,哈哈哈。也终于找回妈妈所做的那种味道。
当然还可以在好多一些。问题还是出在面包不够软。

其实不难做,也不需太花时间。
只是搓揉面团的功夫和技巧掌握到好。
当然可以加柔软剂,但自己不太喜欢柔软剂的味道。

Buttermilk White Bread Recipe: Makes 2 loaves
材料:
5 - 6 cups bread flour
3 tablespoons sugar
2 teaspoons salt
1/4 teaspoon baking powder
1 package instant yeast
1 cup water
1 1/3 cup milk
1/2 block of butter

方法:
With medium heat warm up the milk and water in a sauce pan. Then melt the butter into them。Do not make it too hot or you will kill the yeast.

In the bowl, mix the flour, sugar, salt baking powder and yeast together.

Add the lukewarm buttermilk from the saucepan to the dry ingredients.
Using a wooden spoon or your hands and mix for 2 minutes. After mixing for 2 minutes add another cup of flour.

Pour dough onto a lightly floured surface and knead for 8 - 10 minutes. Adding the rest of the flour a 1/2 a cup at a time till the dough is smooth and silky.
You do not have to add all the flour. Place dough into a large clean bowl with a little oil.

Roll the dough in the oil to coat all sides. Cover with plastic wrap. Place in a warm area till double in size.

After the dough has doubled in volume, punch it down gently.
Divide the dough into 2 equal sections and place into a greased bread pans.
Cover and let rise till doubled again about 45 minutes. Preheat oven to 200C.

Brush dough with a mixture of egg and water.
Place in oven and bake for 15-20 minutes.
Remove and place on a wire rack to cool.
